Abstract

Microgreens, a trending food product is gaining popularity due to its properties viz flavour component, as a garnish and also high in phytonutrients. These are young, tender and edible cotyledonary leafy greens which requires 7-8 days to grow and are harvested after sprouting as shoot. It requires a protected environment and can be cultivated in any medium. They are a rich source of bioactive components. The shelf-life of microgreens is too short due to rapid deterioration. They can contribute, directly or indirectly, to preserve and improve the biodiversity and environmental sustainability, increase food and nutritional security. Soil cultivation is the commonly used cultivation technique. This method breaks down the soil crust, making easy penetration of water, nutrients, and air, in turn making it available for the plant. Hydroponics method provides healthy, clean and grit-free seedlings. It is a speedy process as all the nutrients required are directly absorbed by the plant. Coir pith cultivation enhances the nutrient content, water holding capacity, maintains moisture and reconditions the soil. Hence a comparative study of micronutrients and phytochemicals of the microgreens as well as of their cultivation and growth pattern was planned with the above background. The study provided the benefits for consumption of the microgreens which are less popular in Indian cuisine.
